Recipe: Ingredients – 1/2 cup extra virgin olive oil – 2 lemons – 2 cans brown lentils, drained & rinsed – 2 medium cucumbers, chopped – 1 large red onion, chopped – 1 large red capsicum, diced – 1 large avocado, diced – 150g feta, crumbed – 3 cups parsley, roughly chopped Method: Divide ingredients evenly into 3 mason jars in the above order starting with the salad dressing on the bottom and then layer the remaining ingredients on top.
